Ochil Fudge Pantry produce a variety of flavoured fudge products. Hand made in a manufacturing facility in Alloa Scotland, the products are hand crafted with love and care and sold in a number of prestigious outlets.
To try and increase retail expansion, the site were looking at potentially increasing the shelf-life of the product, without detrimentally affecting the “clean” ingredient declaration and flavour.
The support consisted of Wayne Johnson (Faedah Solutions MD) reviewing the current shelf-life, ingredient declaration and packaging used. Product shelf-life is restricted / set by the microbiological loading and organoleptic limits of the product. Due to its high sugar content, the microbiological results were excellent.
With his 30 years of technical experience (including microbiology, new product launches) Wayne advised the site to review the oranoleptic limits for each product and trial extensions of these. Reviewing current packaging was also advised, if the extended shelf-life required could not be reached.
